Ingredients: 

1 (14 Oz) can unsweetened coconut milk

1 Tbsp molasses

4 Tbsp unrefined cane sugar
(or brown sugar instead of molasses and sugar)

1/2 Teaspoon of xanthan gum

1/2 Teaspoon of Salt

Preparation: 

Blend milk, molasses, sugar, salt, and xanthan gum in blender.
Pour in pot over medium heat until boiling.

Lower heat to medium-low and simmer for about 20 minutes, stirring often, until thicker consistency.
Remove from heat and let it cool at room temperature. Caramel will thicken further as it cools.
