I found myself making sandwiches for a trip. I realized I didn't have any gluten free bread for one of my sons and me. So I came up with this idea. Thicker Pancake batter with less sugar! they Turned out great!!
Ingredients:
2 1/2 cups of rice flour
2 Tbsp sugar
1/2 tsp salt
2 1/2 tsps. baking powder
1 tsp xanthan gum
2-3 cups almond milk (to desired consistency)
1 cup of ground almonds

Put all ingredients in blender and blend until batter is well mix. Add more milk , if needed, to reach desired consistency.

Cook on a griddle as
you would pancakes. Let them cool.
Cut
in half and add the ingredients for you sandwich: Ham, lettuce, tomatoes,
ketchup, mayo, etc.
