No-Bake No-Mess Coconut Macaroons
(Egg free, gluten free, grain free, dairy free)

Ingredients:
1 cup coconut oil
1 cup creamy honey
1/3 cup unrefined sugar
2 cups unsweetened shredded coconut

Preparation:







In a small pot, melt coconut oil and honey on medium heat. Turn off heat.

Add sugar and shredded coconut and stir.

Scoop into cupcake pan. Refrigerate for about 2 hours. In the summer, keep it refrigerated.
