Pancakes
(Gluten Free, Egg Free, Dairy Free)
Ingredients:
1 banana
1⁄2 cup Coconut milk (or to desired batter consistency)
2 Tbsp sugar (I use unrefined granulated cane sugar) 1 tsp baking powder
1Tbsp cornstarch
4 Tbsp full rice flour
1 tsp xantham gum
About 8 almonds (optional)
Blender instructions: Put all ingredients in the blender and blend until well mixed.
Whisk instructions: Mash bananas well. Stir in coconut milk.
In separate bowl, combine sugar, baking powder, cornstarch, flour and xantham gum. Mix well and add to banana mixture. Add more milk to get desired consistency , if needed.
Optional, grind the almonds and add to the mixture. It’s just a fun way to spice up your pancakes!
