Ingredients:
3-4 ripe bananas, smashed
1/3 cup butter (substitute oil)
1 cup sugar (I used unrefined)
1 Tablespoon cornstarch (substitute ¼ cup applesauce)
1 teaspoon vanilla
1 teaspoon baking soda
Dash of salt
1 ½ cup rice flour
1 teaspoon xanthan gum
1 teaspoon baking powder
1 cup raisins (optional)

Preparation:
Preheat oven to 350 F. Mix bananas, butter or oil and sugar. Add cornstarch and vanilla. Mix well.
Mix in baking soda, salt, flour, xanthan gum and baking powder.  When all ingredients are well mixed, add raisins.
Pour in greased baking pan and cook in oven for 45 minutes.
